相信大家都有聽過什麼是天使的分享（Angel’s Share），但你又知道什麼是魔鬼的瓜分（Devil’s Cut）嗎？
先來說一說天使的分享，即是指威士忌在木桶中陳年時，在木桶中的酒液會逐年因蒸發作用而減少，隨著溫度濕度等不同，每年平均蒸發大約 2-4%不等，但在一些較乾較熱的地方，每年蒸發十數%也是可以，這些蒸發掉的酒，以前的人會戲稱為天使的分享，是天使把酒拿去喝了（蘇格蘭的天使真幸福）。
相反地，有天使就有魔鬼，那魔鬼又怎樣偷取我們珍貴的酒呢？就是新酒裝進木桶後，被木桶吸收掉的酒液，根據木質的不一樣，魔鬼偷取的酒量亦有所不同，最多可有十升之多，例如材質較鬆散的紅橡木自然會比堅實的白橡木吸收更多原酒，某廠商強行把酒從木片中榨壓出來裝瓶，相信我，那個味道跟咀嚼濕木頭沒有太大分別。
